winecfg should be launchable from the Bottle Manager of CrossOver,
as part of the more advanced options (look for 'Control Panel').

Failing that, you can launch it from the command line (on Linux at any rate)
as follows:

  cxoffice/bin/wine --bottle <your-bottle-here>  --wl-app winecfg
